Chocolate Dipped Clementines.

Remember the Brie and Apple Tarts that I posted two weeks ago? Well, Michelle is back. With what looks like yet another delicious treat!

INGREDIENTS
6 Clementines, peeled and segmented
1 3.5 ounce Chocolate Bar (looks like Michelle used Hershey's Symphony)
Coarse Sea Salt


Lay clementine slices on a parchment paper lined baking sheet.


Melt chocolate in either the microwave or a double boiler.  A common mistake that is made when melting chocolate, is putting the chocolate directly in a hot pan and waiting for it to melt.  Do not do this. It will only burn the chocolate.


Dip half of the clementines in the chocolate, then sprinkle with sea salt. Continue with remaining slices.


Refrigerate for 10 minutes before serving.

Banana Cookies With Peanut Butter Filling


Paul decided to play a video game, so I decided to make delicious cookies.  I was nice, I still gave him one.


INGREDIENTS
1 cup firmly packed brown sugar
1/2 cup sugar
1 cup butter , softened
1 cup mashed banana (about 2 medium)
1 egg
1 teaspoon vanilla
2 3/4 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt

FILLING
1 cup peanut butter
1/2 cup butter
1 cup powdered sugar


Preheat the oven to 350 degrees.

Combine the brown sugar,  sugar, and butter in a mixing bowl.  Mix well until creamy.


Add the bananas, egg, and vanilla.


In a separate bowl combine flour, baking soda, and salt.  Add flour mixture to the banana mixture. Mix well until it becomes a soft dough.


Depending on the size of cookie you want, drop a tablespoon of dough onto greased cookie sheet.


Bake 11 to 13 minutes, or until the tops become lightly browned.

Meanwhile, beat the peanut butter, butter, and powdered sugar until well mixed.


Once the cookies have had time to cool (on a wire rack), spread about one tablespoon of the peanut butter mixture on the bottoms of half the cookies.  Make sure the cookies have had time to cool, or the filling will melt. 


Top with other half of the cookies to form a sandwiches.

Brie and Apple Tarts

Look familiar?  You may have noticed this picture from our blog title.  Our friend, Michelle, came over with the ingredients today. If only we could thank her more for these :)
Oh, and the answer is yes. They were just as delicious as they look.

INGREDIENTS

1 box (2 sheets) of puff pastry, thawed
1 green apple
1 tablespoon brown sugar
1 tablespoon of butter
1/4 teaspoon of cinnamon
1 medium wedge of brie
1 egg
flour (for rolling)


Preheat the oven to 400 degrees.

Unfold puff pastry onto a lightly floured board and roll is slightly until until its a 10 by 10-inch square. Cut the sheet into quarters with a sharp knife. Place a slice of brie onto each of the squares.  Brie doesn't have a strong flavor, so don't worry about putting too much.  Next place 2-3 thin slices of apple on top of the brie.


Next, sprinkle the apples with cinnamon and brown sugar. Then top with a small pat of butter.


Line a sheet pan with parchment paper.  Brush the border of each square with the egg wash, and fold 2 opposite corners to the center.  Brush the tops of all the folded pastries with the egg wash. Place the pastries on the sheet pan.


Bake for about 20 minutes, rotating the pan once during baking, until puffed and brown. Serve warm.
